- ¾ cup (180ml) whole milk, warm
- ¼ cup (50g) granulated sugar
- 4 tbsp (56g) unsalted butter, softened
- 1 large egg
- 3 cups (360g) all-purpose flour
- ¾ tsp salt

- ⅔ cup (140g) brown sugar
- 1 tbsp cinnamon
- 4 tbsp (56g) unsalted butter, softened
For the Cream Cheese Frosting:
- 4 oz (113g) cream cheese, softened
- 2 tbsp (28g) unsalted butter, softened
- ¾ cup (90g) powdered sugar
- ½ tsp vanilla extract
- 1 tbsp milk (optional, for a thinner frosting)

1. Prepare the Dough (Night Before)
- In a mixing bowl, whisk together the sourdough starter, warm milk, sugar, butter, and egg until well combined.
- Add the flour and salt, then mix until a shaggy dough forms. Knead by hand for about 8–10 minutes (or in a stand mixer for 5 minutes) until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise overnight at room temperature (8–12 hours) until doubled in size.
2. Shape the Cinnamon Rolls
- The next morning, lightly flour a surface and roll out the dough into a 12×18-inch rectangle.
- Spread softened butter evenly over the dough.
- In a small bowl, mix the brown sugar and cinnamon, then sprinkle it over the buttered dough.
- Roll the dough tightly from the long side into a log. Cut into 9–12 equal pieces and place them in a greased baking dish.
- Cover and let them rise for 1–2 hours, until puffy.
3. Bake the Cinnamon Rolls
- Preheat your oven to 375°F (190°C).
