Ingredients Sourdough Cinnamon Rolls

For the Dough:

  • ½ cup (120g) active sourdough starter
  • ¾ cup (180ml) whole milk, warm
  • ¼ cup (50g) granulated sugar
  • 4 tbsp (56g) unsalted butter, softened
  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • ¾ tsp salt

For the Filling:

  • ⅔ cup (140g) brown sugar
  • 1 tbsp cinnamon
  • 4 tbsp (56g) unsalted butter, softened

For the Cream Cheese Frosting:

  • 4 oz (113g) cream cheese, softened
  • 2 tbsp (28g) unsalted butter, softened
  • ¾ cup (90g) powdered sugar
  • ½ tsp vanilla extract
  • 1 tbsp milk (optional, for a thinner frosting)

Instructions Sourdough Cinnamon Rolls

1. Prepare the Dough (Night Before)

  1. In a mixing bowl, whisk together the sourdough starter, warm milk, sugar, butter, and egg until well combined.
  2. Add the flour and salt, then mix until a shaggy dough forms. Knead by hand for about 8–10 minutes (or in a stand mixer for 5 minutes) until smooth and elastic.
  3. Place the dough in a greased bowl, cover, and let it rise overnight at room temperature (8–12 hours) until doubled in size.

2. Shape the Cinnamon Rolls

  1. The next morning, lightly flour a surface and roll out the dough into a 12×18-inch rectangle.
  2. Spread softened butter evenly over the dough.
  3. In a small bowl, mix the brown sugar and cinnamon, then sprinkle it over the buttered dough.
  4. Roll the dough tightly from the long side into a log. Cut into 9–12 equal pieces and place them in a greased baking dish.
  5. Cover and let them rise for 1–2 hours, until puffy.

3. Bake the Cinnamon Rolls

  1. Preheat your oven to 375°F (190°C).
  2. Bake for 20–25 minutes, or until golden brown.

4. Make the Frosting & Serve

  1. Beat the cream cheese and butter together until smooth. Add powdered sugar and vanilla, mixing until creamy.
  2. Spread over warm cinnamon rolls and enjoy!
